AOC Graves Red
Pure elegance, one can taste the epitamy of fresh crisp fruits, morello cherries and crurents, all coming together to tease the nose. An oakyness of genuine quality, a characteristic of a well matured wine. The cabernet brings aroma and structure, whereas the merlot its powerful scent and suppleness. Overall, this wine has a pleasing red fruits aroma accompanied by grilled and spicy notes. Elegant a structured; refined and aromatic.
Surface: 20 hectares or 49.5 acres.
Terroir: strong gravelly soil made of a first pebble layer and subsoil flint/clay. Density of planting: 5,000 vines/hectare.
Average vine age: 30 years.
Blend: 55% Merlot – 45% Cabernet Sauvignon.
Crop Yield: 49 hectoliters/hectare.
Harvest: Handpicked and machine harvested. Vatting time: 24 to 30 days. Fermentation duration: 4 to 5 days. Maceration time: 20 to 25 days.
Temperature regulation: cement tanks with thermo-regulation.
Malolactic fermentation: 10% en fûts de chêne.
The wines are hence aged for 12 months in oak barrels, renewed in part each year, one third at a time. The final blending of the wine is then performed, before a small fining and finally the bottling at the château.
